We had so much fun, great speakers and good food. They served lasagna which I didn't want to even try. So I made a big quinoa salad. lol most people don't even know what quinoa is. SO surprising. I just wanted to share the recipe I used, it is SO GOOD!
I combined 3 different recipes.
I tried for the first time soaking the apples in ice cold water and 1/2 c apple cider vinegar and 1/2 c pineapple juice, I didn't have any lemons or limes or oranges. I cored the apples threw them in and then sliced them after and returned the smaller pieces to the cider mixed water.
1.5 c cooked red quinoa (much better that the golden)
4 apples cut in bite sized pieces
4 celery stalks diced
1 bunch cilantro leaves chopped
1/2 c toasted pecans
2 tBS red onion minced
Mix together with dressing.
Blend in blender or small food processor
1/2 c plain greek yogurt
1/4 c honey
1/4 c apple cider vinegar
1/8- 1/4 jalapeņo depending how hot you want it
2 TBS cilantro
pinch of kosher salt
Mix together and pour over quinoa mix.
IT IS DELICIOUS!! And the apples stay so crispy after soaking in the apple cider.
Even the next day it is so good.
