Back to normality this week

The funeral went well. I said my eulogy and helped carry my grandpa out of the chapel. Now I'm looking forward to getting back to normality.

I have spent the afternoon baking. I made zucchini and spinach Crustless quiches for my lunches this week (I'll have them with salads) and a zucchini chocolate cake for a sweet treat. No points for guessing which vegetable is in season and CHEAP at the moment. I like using zucchini in my cooking and baking so I'm not complaining. It adds bulk and fibre for next to no calories. Bring on zucchini season, I say! Strawberries are also super cheap right now so they are being sliced up and added to yogurt, or put in salads. Or eaten whole faster than I like to admit. Oranges are yummy at this time of year, I just demolished a punnet of grapes... Safe to say that I'm getting tonnes of fruit and veggies at the moment!

This week I'm looking forward to getting back to the gym! What with being sick and planning a funeral I haven't been going much. The plan for this week is

M - boxing
T - weights
W - boxing
T - weights
F - rest
S - boxing
S - weights

I can't wait to get back into my usual routine!

    Zucchini is good to slice thinly in salads. When my kids were young I would add sliced zucchini to a salad and tell them that it was Italian cucumber. They ate it for several years like that.

    I quite like the zucchini in baking too :-) My zucchini cake is much like carrot cake. I like parsnip cake, too (with chopped up walnuts :-)
