Grilled Veggie Cheese Sandwich with Smoky Pesto

Paired with a Sauvignon Blanc, this was an amazingly decadent Friday Lunch at home with my husband! Love my Friday's off!
1 cup basil leaves, packed
2 garlic cloves coarsely chopped
1 tsp smoked paprika
3-4 T olive oil
1/2 medium to large zucchini cut into 6 lengthwise slices
1/4 of a yellow pepper, cut into wide slices
1/4 of a red or orange pepper, cut into wide slices
4 slices of red onion, cut thick
4 slices good bread (I used a petite olive loaf - the recipe called for English muffins)
3-4 ounces sliced cheese (I used half Manchego and half Jarlsburg - the recipe called for Gruyere)
In a mini food processor (or blender), combine the basil, garlic and paprika and process until finely chopped. Gradually pour in the olive oil until blended as desired. Set aside.
Light a grill (I did mine in a cast iron skillet), heat to high temperature with a bit of olive oil. Grill onions, peppers, and zucchini until just tender and nice and browned with grill marks. Take off the heat and set aside on a plate.
Grill the bread slices or English muffins just until lightly browned, about 1 minute. Turn and grill the other side about 30 seconds. Turn again.
Spread the pesto on 2 of the up sides, then layer with 1/2 the cheese, zucchini, peppers, onions, other half of cheese and top with the other 2 slices of bread.
You can just grilled and turn and serve, but I had mine in a cast iron skillet. I heated a second cast iron pan and put it on top of the sandwiches and pressed down with a pot holder. Then let it sit for about 2 minutes or so. They turned out perfect!
Serve with your favorite fruit or salad and a glass of Sauvignon blanc!
