Stretching Sausage - An Eggplant Pasta Sauce

I love Italian Sausage, but I feel guilty when I eat it because its mucho calories. Turkey sausage is a second - good, but just not the same. My parents gave me the last of the the eggplant from their garden and I made this last night and it was soooo good....
4 Italian sausage links broken up
4c eggplant 1/2" dice (I peeled, but not a necessary step if the peel doesnt bother you)
1 medium onion, chopped
1-2 cloves garlic (which I didnt actually have, but wish I did)
1 lg can diced tomatoes
Oregano & pepper (and whatever other spices make you happy)
Brown sausage in a dry pan, add eggplant and onion, let it start to get soft. Add garlic, tomatoes & spices and let simmer while you cook pasta. The sausage flavor gets spread around and you get the same sausage flavor for fewer calories. Serve "sauce" over pasta, its very chunky.
Please note: there is no additional salt in this recipe. There is alot of salt in canned tomatoes and Parmesean cheese is naturally salty also. Dont add salt to things "just because". Taste it a few minutes before service and you may find you can get away with less salt. Your body will thank you.
