Veggie Challenge Day 4

Still going strong! I've been eating more cheese the past week or two, and it doesn't seem to be an issue for me. Focusing on veggies, it's been really easy to keep my carbs pretty low, and I'm not missing bread or other starchy stuff at all. Weight was up this morning, but I've got some upper body soreness going on, so hopefully it's just water retention from that.
Red flannel hash (beets, onions and bacon) with fried eggs
Coffee with cream
Raw veggies - radish, carrot, broccoli and red bell pepper
Cheese, turkey, salami, olives
A few almonds
Got to go see my horses after work and ride for a little bit just as it was getting dark - the time change is so annoying!
Tall Mocha (Got my free birthday drink on the way home from the stable, wanting something hot)
Asparagus w/sundried tomatoes
