I woke up early so I could get into the office extra early today. I had a meeting that started at 8:00 so I wanted to get a quick bite before it started. The weather was kind of iffy so I left half an hour early and still only made it with ten minutes to spare. I put away my produce (went shopping last night) and grabbed a cup of coffee and some water and headed for a two hour meeting. They had bagels so I had one with a little bit of cream cheese. At ten when I was back at my desk I had an egg sandwich and an apple. Now at 2:15 I'm just eating lunch which was slapdash but at least it's not fast food! Two large carrots and two english cucumbers wafer sliced with half an avocado and 4 oz of grilled chicken breast all with a teaspoon of homemade vinegar and oil dressing. It looks pretty and colorful and all the flavors go well together so it's not bad although I would have liked to make a whole salad. I bought all the ingredients for great salads. I'll have another veggie later to try to make up for my lack of veggie servings. I also have frozen berries so I'll throw some of those in a cup of plain greek yogurt before I leave work tonight.
My stomach is a bit upset today. I think it's because I went a little crazy on the fiber yesterday, I have to remember to pace myself when I start eating healthy or I just feel ick for the first few days. I just took a bite of avocado, chicken, carrot and cucumber all together and it would make a really tasty chicken salad.
