Cooky Recipe Number 29: Coconut Butter Balls and Number 30: Brazilian Coffee Cookies

Wow…it's been a while since I've blogged. A bit of baking, a bit of running and a trip to Colorado have occurred since I last checked in.
First, the baking.
Coconut Butter Balls

Sorry, I couldn't find the recipe online but they are pretty much a shortbread dough wrapped around a pecan half and then rolled in coconut and baked.
Brazilian Coffee Cookies…why Brazilian? I have absolutely no idea.

Non-Betty Crocker baking
Cook's Illustrated asked me to test their Gluten-Fee Birthday Cupcakes. There were no birthdays to celebrate but I baked cupcakes anyway…can't give you the recipe until it's published but here they are. Vanilla cupcakes with vanilla icing..pretty tasty but I think I'd use chocolate icing in the future for a little variety.

Kitchen Sink Brownies….I baked both standard and gluten free versions for a couple of occasions….very tasty and very decadent. Gluten free just used King Arthur Flour Gluten Free Flour and some xanthan gum to replace the AP flour and Trader Joe's gluten free Jojo's to replace Oreos.

For my niece's birthday, she requested oatmeal cookies as a gift and yellow cupcakes with coconut icing for her cake. She really likes 7-minute icing. I used the Fluffy Cherry Frosting recipe that she likes and used water in place of the cherry juice and added coconut flavor instead of cherry.

She likes hers unadulterated so there was no cinnamon or cloves added.

We went for a trip to Colorado for the IPMS (International Plastic Model Society) National Contest. My husband builds models and entered a few.

This won a 2nd place in hypothetical aircraft.

Sadly neither the motorcycle or the cool drug smuggling sub won anything.
We did visit Rocky Mountain National Park:

I met up with my Sparkfriend, Speedydog, for a trail run and yummy dinner but I didn't get any pics.
I did not do the San Jose RnR half marathon as planned. Exactly 2 weeks before while I was out on my 14 mile long run (and had just hit 14 miles), I managed to roll my ankle and it was not up for racing.
I'm back to running again and my ankle and foot seem pretty happy. I am not going to register for another RnR anytime soon…..they just don't seem to work out well for me.

I did get a new pair of shoes, though.

No, I don't wear them for running but they are pretty cute.

    Hi Nat,

I had a great time with you and Greg. I still think he got robbed! However, the 2nd place in Hypothetical Aircraft is impressive. After all, he was competing with the best fine scale modelers in the country. The quality of all entries was staggering! Having been a show judge at the regional level, I know that personal preference is part of judging.

    Hi Nat! glad to see that you are still baking! I have a friend who is gluten free, so I have started baking GF stuff. not from scratch though. ive been using bobs red mill mixes. I will have to test out your kitchen sink brownies though. I think she will love them!
sorry the RnRs aren't working out. and that you had to miss the one you signed up for. I hate it that you injured your ankle. is it healed now?

i just signed up for my first half marathon. its going to be fun because i have several local friends who have started running and they have signed up too.cute boots!!

Congrats to your hubby on placing 2nd, bummer on the other ones, they are really neat!

WOW that was cool of them to ask you to test the cupcakes, can't wait to hear more about it!

And can I say BROWNIES, YUM YUM, that is my weakness!

Bummer on not being able to do the San Jose half marathon, hope your foot is doing better.

    Are those Doc's? They're pretty adorable.
I'd send your dh an award for that way awesome drug smuggling sub. I seriously question the judges' judgment. The bike and plane are spectacular too.
Dangit, what a bummer about your ankle. I'm glad it's fixed now, but how frustrating that must have been not to race. Well, at least it's not still giving you trouble and you can wear cute boots.
I'm looking forward to gluten free recipes that will someday have ingredients I'm familiar with. Call me a picky and cynical purist, but really, I'd just like my food alternatives to actually be made with recognizable food products. That said, I bet Cook's Illustrated's recipe makes a delicious cupcake, even if they use tapioca starch and xanthum gum (whatever type of "food" those are). I used almond flour in some cookies a couple weeks ago. They were crumbly so I don't think anybody else would have liked them. We all pick our battles, I guess. I'll stop ranting on your excellent blog now. Everything looks super yummy!

    The baking looks outstanding!! You know, I've about gotten over my trigger foods and declared peace with all foods. But if I had all that sitting around, that would be a real test!! You must be VERY strong.

Hubby's model are impressive to say the least. Glad you got a good trip and even got to meet a SparkFriend for activity. Good Going!!

Colorado is one of my favourite places in the world, a hiker and climber's paradise.
Yay for your DH. Those competitions are interesting and wide-spread, makes for fun travel time. Cool you met up with a spark friend, all my spark friends still have virtual status. Except for my two friends who joined up spark because of me talking about it.

I am so glad you are up and running again. Races can be over rated, you can do virtual races on your own timeline.
