and that means it's time for pot roasts, delicious stews, 4-bean chili and all kinds of crock pot meals. My favourite kind of cooking.
Two days ago I made pot roast with a very lean roast, baby red-skinned potatoes, lots of carrots, celery and big chunks of onion. It tasted delicious the first day, even better the second, and the last bit made a perfect lunch today.
My slow cooker meals have less meat, more vegetables. The slow cooking and home-made broths make the flavours blend beautifully. I always use lean meats, remove the skin from chicken, choose lots of in-season vegetables (or use up left-overs likes the celery), and do not add salt as I'm on blood pressure medication. I refer to some of my cookbooks for ideas about using herbs and spices.
Slow cooker meals are perfect for busy days or for lazy days. If you have any favourite slow cooker meals that you're willing to share, I'd love to have them.
