Fall is definitely here...

and that means it's time for pot roasts, delicious stews, 4-bean chili and all kinds of crock pot meals. My favourite kind of cooking.

Two days ago I made pot roast with a very lean roast, baby red-skinned potatoes, lots of carrots, celery and big chunks of onion. It tasted delicious the first day, even better the second, and the last bit made a perfect lunch today.

My slow cooker meals have less meat, more vegetables. The slow cooking and home-made broths make the flavours blend beautifully. I always use lean meats, remove the skin from chicken, choose lots of in-season vegetables (or use up left-overs likes the celery), and do not add salt as I'm on blood pressure medication. I refer to some of my cookbooks for ideas about using herbs and spices.

Slow cooker meals are perfect for busy days or for lazy days. If you have any favourite slow cooker meals that you're willing to share, I'd love to have them.

    I love my slow cooker too! Tomorrow DH will brown a roast, add lots of vegetables and start the cooker before we leave for church. We have invited my parents for Sunday dinner.

    I don't know how well you like chicken so if you don't............just ignore the recipe below.......

    Slow Cooker Marinara Chicken

    32 oz. boneless, skinless chicken breasts
    18 oz. low-sodium Marinara Sauce (1 jar)
    4 cloves garlic, crushed
    4 red ripe tomatoes, chopped or 1 can (14.5 oz.) low-sodium tomatoes, drained
    1 cup celery, diced
    2 zucchini, diced
    1 t. dried basil
    1 t. dried thyme


    ce all ingredients in a slow cooker. Set on low heat. Cook for 6-7 hours.

    Number of Servings: 8

    We eat a lot of chicken and this is one of our favorites.

    I use my pressure cooker at least a couple of days a week we got a slow cooker as a wedding present but very rarely used it (35 years ago) ended up giving it to a charity collection. However recently I have been tempted to get a small one to try again sparks have a lot of nice sounding recipes and it would be nice to come home to a fresh cooked meal.

    I use my slow cooker all year round. In summer we put it out in to the garage and it does not heat up the hose any more than Mother nature.
    Now it is inside and cooks overnight to Humidify the house. It is nice to wake up to as well.
    I precook most of my vegetables in the microwave, onions we love I like them cooked soft DH does not care. He eats them raw, cooked, and caramelized. He loves onion pie and onion soup.
    I roast pork tenderloin when I am baking and then I can slice them up into roasts and we often use them that way. Sliced for salads and sandwiches and the left over I use for a Spark recipe ~~~~ "Caribbean Pork stew with pineapple"~~~ we never eat rice so I add more

    I have a slow cooker around here somewhere... Is there such a thing as slow cooker meals for one? I know, I know, cook a family sized whatever, then fill single portion sized containers freezing those that will not get eaten within a few days ... The trouble with that is that once in the freezer for more than a week and I forget to pull them out for a sort-of-quick meal. Yes, that is another personal problem.
    It had been pouring rain and gusting wind all morning... now the sky is blue, still breezy.
