Tonight my lovely daughter and her fiance are coming for dinner. So I've been cooking since early morning. Certainly an eclectic menu.....turkey gravy over mashed potatoes, spanakopita, Greek salad, corn, and sponge cake with chocolate glaze and vanilla ice cream for dessert. My daughter introduced her Australian fiance to the turkey gravey and mashed potato idea last year and he loves it so she chose that for me to make. Sweet girl!
Not so sure about the sponge cake. It's not light and fluffy as I thought a sponge cake should be....I found it intimidating because it's so different from all the American-style cakes I'm used to making. I think the recipe must've been off with the flour measurements - first recipe I looked at used 1/3 of flour and 1/3 cup cornstarch. This one used 2 cups of flour. I think it'll be more like a butter cake, which is not a bad thing. My daughter won't care. She knows it's made with love.
No walk today yet as I've been so busy in the kitchen. I have to get out and forage for possum food though so at some point this afternoon I'll we walking. One big success so far.....I bought ice cream for tonight and it's in the freezer unopened. That's a first! I know I can have some tonight so my brain hasn't convinced me "you need some NOW". Quite happy about that! Slow and steady wins the race.
