We love quiche but the pastry is the unhealthy part of it and as I am careful to avoid wheat I like to make them without the crust.
I have been experimenting with different flavors - here are 2 of the latest ones:
Bacon, cheddar and green chile on the left and spinach, onion and mushroom on the right.
After indulging a little over the summer and when we got back to Mexico last month, I was up over 5 pounds and it was time to get back with the program this week. After 4 days back on the Plan I am down 2 pounds and feeling much better.
It has been fun having DD staying with us and she will be here for another month before moving back to Europe. She will stay with my mum in Holland for a bit and then find a place of her own.
We're going to make the most of this month!!
