Quiche without the pastry

Saturday, October 26, 2013

We love quiche but the pastry is the unhealthy part of it and as I am careful to avoid wheat I like to make them without the crust.
I have been experimenting with different flavors - here are 2 of the latest ones:

Bacon, cheddar and green chile on the left and spinach, onion and mushroom on the right.

After indulging a little over the summer and when we got back to Mexico last month, I was up over 5 pounds and it was time to get back with the program this week. After 4 days back on the Plan I am down 2 pounds and feeling much better.

It has been fun having DD staying with us and she will be here for another month before moving back to Europe. She will stay with my mum in Holland for a bit and then find a place of her own.
We're going to make the most of this month!!

Hi Lis. The crustless quiche looks great! It gives me an idea for dinner tonight. I am back on Sparks again after a whirlwind of activity after moving to Spain. I look forward to being in touch with you again.

Those are gorgeous! Frittatas are also a great quick dinner after a brutal workday, and infinitely better than anything from the drive-through.

I used to make crustless quiche all the time, but haven't done it in years!

They look great! I've been eyeing a comeback of pizza without the wheat flour but I'm not against using coconut flour, wheat germ, wheat bran and eggs to make the dough though. It's the starch portion of the wheat that isn't so good for us. I'm getting my ingredients together.

Great news that your DD is still with you. What a training for an overseas lifestyle. You guys need to have 'International' as the title of your name. Very impressive.
