Fuhrman's Sweet and Simple Squash

And all these years I have been putting butterr and brown sugar on the squash! No need to make it so high calorie! Yeah!

Sweet and Simple Squash

Serves: 2 Preparation Time: 30 minutes

Injavascript:void(0);gredien
ts:

2 cups butternut squash, peeled and cubed
1/2 cup raw cranberries
3/4 cup fresh pineapple, cut into small pieces


Instructions:
Simmer squash cubes in 1/2 inch of water in a small covered saucepan. When almost tender add the cranberries and simmer covered, stirring occasionally, until they pop, adding water if needed. Add the pineapple chunks, simmering until the pineapple is warm and blended into the squash.

    Sounds great. I love roasting it with cumin and cinnamon and tumeric (or curry) along with any other vegetables. Yum! I will try this too.

    Sounds great! I just bought some fresh, local cranberries. I have a favorite Weight Watchers recipe that was just baked sweet potatoes mashed with a large can of crushed pineapple.

    Mmmm, I love squash. We've been enjoying some right out of the garden. A little butter and brown sugar and salt go a long way with making this favorite just right with the taste test!! I'll have to try your version too! emoticon

    Wow sounds good. I think people just do what their mother did in the past. Most butternut squash doesn't need the sugar and butter I cook it and eat it with salt and pepper for dinner. For a sweeter version I put cinnamon, nutmeg, ginger and cloves and sometimes a little sweetener but I never add the butter.
I will definitely try this recipe today. I have 11 squash 4 butternut and some I have never seen before. I am cooking it and freezing most of it for a later date and going to make some into soup. Teri

Look for the squash called "Kabocha." They look like a green pumpkin. The super markets in this area get them with other assorted winter squash one time in the fall, and I buy all they have.
They are SO SWEET that they are delicious just baked and scooped from their skin! The left-overs freeze well.

    Pineapple is a little too high on the glycemic index for me. I'd add some lemon zest, lemon juice and cinnamon to cut the bitterness of the cranberries.
