I used a different curry paste (red) and it doesn't taste as good to me as the last container I had which was yellow. Anyway, I decided I am going to go ahead and make more food to choose from. If I don't finish something, that's fine. I just wish I had friends who wanted to eat this way with me. It's really hard for me to make small quantities of casseroles, soups or curries. Thank goodness smoothies and oatmeal are easy to make in single servings. I did have a smoothie-spinach, orange & 1/2 banana with almond milk. I had vegetable curry for lunch along with a quinoa with veggies salad for lunch. I had a banana when I came home from work and then 2 corn tortillas with refried beans, diced tomato, avocado and salsa for dinner. Yum!
