Golden Anti-Inflammatory Beet Soup Recipe

pair the nutrient rich beets with creamy coconut milk, collagen-rich chicken bone broth (or vegetable broth) and anti-inflammatory ginger and turmeric.
Once the beets are cooked and peeled, this recipe takes minutes to assemble and blend. If you use a high-powered blender, you can let the soup heat up right on the blender!
Clean up is quick and easy. Pair with a nice large salad, green tea and you have the ultimate anti-inflammatory meal.
2 cups organic chicken bone broth (or vegetable broth for a vegan version)
3 large organic beets, washed cooked and peeled
1 can coconut milk, from BPA-free cans
2 Tbsp. raw coconut oil (optional)
1 lemon (or lime) peeled
1″ fresh ginger, peeled
1 Tbsp. cumin, ground
1 tsp. turmeric, ground
dash of salt
Combine ingredients and blend.
