One More Step Toward Health, Happiness, and Harmony

Oh, yes, I did get up and go walking this morning at 8:22. Happy Saturday!
The following phrase helped me a lot this week. Rather than allowing my mind to spin out into worry, it reminded me to focus on the present moment and enjoy it to the fullest.
"The future is not here yet. The past is gone. Right now you are free in the present."
So . . . all week I've been fixing yummy healthy dinners like I'm a gourmet chef or something. It's funny because I don't like cooking very much (though I do enjoy baking). No one’s very appreciative about what I cook. It’s like the burden falls on me night after night to make sure people are fed, and I don't love it, so I end up spending too much money on take-out. Anyway, this week I’m having fun creatively putting together dishes, and they’re turning out beautifully and super healthy. With the fam out of town, there’s no pressure to try and prepare meals that cater to specific tastes and dietary needs. I can just cook -- deliciously and nutritiously -- whatever I want.
Speaking of cooking, today I'm excited to try making my first batch of homemade palak paneer, healthy style, of course, with firm tofu instead of paneer (cheese). Boy, do I love Indian food. After that, it's laundry, errands, a lunch date with my son, the college boy, and then I'll just see what the day has in store!
