NOT BAD!

I didn't go RIGHT up to the top of my range, but closer than I planned. Free cookie at work. I picked the smallest sugar cookie instead of the big fat frosted brownie, though. Heh.

PUSHUPS AGAIN! yesterday. Plus a nice long walk, over 3 miles. My neighbor told me about a bike path that goes from across the street from my house all the way to this really nice park. It was beautiful and I felt so calm yet invigorated crunching through the leaves and acorns. I was like "... wow, the fall colors are so much better this year than the last few years!" and then I remembered for the last 5 years I lived in a city, on a block with NO TREES. so yeah. hahahaha. emoticon TREES!!!!!

I love my little house in my little suburb. It makes me mucho super happiness.

Otherwise, I have been taking pictures for you guys and then not posting them because I'm lazy. But here are some things I made recently:

Cheese bread


They look like croissants but that's just the shape, for fun. It's not Super Butter croissant dough, just bread. White whole wheat with butter, cheddar, & parmesan. It doesn't taste super cheesy after baking though. Next time I'll just do plain bread & put cheese on top near the end, or plain bread and put cheese on it right before eating, or not at all, depending. It's good bread (soft yet deliciously wheaty! white whole wheat flower FTW), it's just not worth the extra calories for the cheese when you can't really taste it.

Also next time I'll divide it into even more, smaller servings. These rolls are bigger than my fist, they are HUGE. I've fit them in my day quite a few times, but really I could make a half batch into 24 servings and still have decent size rolls, plus for half the calories. LOL. Still. BREAD = FUN!

Butternut squash "alfredo"


Looks more like mac 'n cheese, but it's creamy and delicious and that's all that matters. YUM. Now this I will make 10 million times. YES. I ate the last of it for lunch yesterday. Sadface.

Roasted veggies


I LOVE GREEN THINGS. G beans + broccoli. The broccoli got nice and browned & toasty, just the way I like it.

DINNER!

Last Sunday. Not sure what I'm going to make tomorrow that could possibly top this, LOL.

Actually we will probably go out. It's our anniversary.

But I digress (BIG SHOCKER! --ha! made that joke in my last blog! don't care! still funny! (to me!!!))

also made chocolate angel food cake:


It's good, but doesn't have a super strong chocolate flavor. Gets a little dry at this point, a week later. But very tasty with the ganache drizzle on top + whipped cream when serving. (~150 calories for a giant slice. WOO!)

Last night I got all fancy. I saw someone's blog (I'm so sorry, I completely forget who...) with a recipe for sweet potato or butternut squash "noodles" and remembered I have one of those spiraly gadgets. Thought that might be a fun way of making some veggie side dishes, besides just throwing a bag of frozen veggies in the microwave.

So last night, I spiral cut some cucumber, then topped with spiral cut beets that I had sauteed/pan roasted in a tiny bit of olive oil, sprinkled with white wine vinegar & salt & pepper. Put a wee serving of goat cheese on the warm beets. It was very pretty, and quite tasty! I shall henceforth refer to it as Pink Noodles. A fun take on warm beet + goat cheese salad. The cucumber was instead of lettuce obviously.

Mr. Turtle had a bowl, too. YAY FOR ADVENTUROUS VEGGIE EATING HONEYS!

Tonight I'm going to try spiral cut rutabaga. heh - Mr. Turtle probably won't join me on that one...

    I just love your drawings, I always wanted to be an artist, but I lack that thing....talent, lol! I don't even doodle because I can't think of anything, haha!
Roasted broccoli is one of my favorite things (something I don't make often enough)
