Saturday's Dinner Recipes & random 5% challenge update

Happy Tuesday. My headache is still lingering from Sunday. Hopefully it goes away soon. I skipped cardio kickboxing last night because of it. I did a lot of walking yesterday to try to make up for it though. Hopefully the headache is gone by tomorrow because I don't want to miss my spin/barre class.

The 5% Fall challenge is going ok so far. Fall is officially here! The weather is a bit cooler & the leaves are changing so much now! I have been feeling off because of the headache, but otherwise I am doing good. I haven't had tortilla chips or french fries since 10/6, so I am happy about that! I don't get tempted every day - but I do get random cravings for them especially with certain foods - like burrito bowls! I am trying to be a good buddy, but work has been really busy this week so far! Hopefully I can be a bit better when I get the chance!

On Saturday, I went to a flea market type place with a friend of mine. After, I stopped at an orchard and got some apple cider donuts and apple butter for the dinner. It was beautiful outside even though the weather was supposed to be rainy! I bought my Mom and my boyfriend's Mom some mini-mums. The dinner on Saturday was a lot of fun. Everything was pretty tasty - at least that is what I was told! I didn't have most of it because it had cheese or mushrooms in it (yuck). I made some whole grain bow ties & two kinds of regular pasta. I also heated up some alfredo sauce and vodka sauce. For the chicken meatballs, I added them into a tomato basil sauce and fresh basil. I had them in the skillet for a few minutes & then let them sit in the sauce for 3 hours (stirred occasionally). You could just fry them up completely.

All I ate was part of a chicken meatball, whole grain pasta, tomato basil sauce and italian chicken sausage. I cooked some of that for everyone also in case they wanted to try it.

The recipes aren't super healthy, but you could alter them to make them a bit better ( like no cheese, just egg whites, better or no sauce etc)

***Chicken Meatballs***

1 lb ground chicken
1 egg
1/2 cup parmesan cheese
1/2 cup breadcrumbs
2 cloves garlic, minced
2 teaspoons fresh oregano (or the equivalent dried)
1/2 teaspoon salt
2 tablespoons olive oil

Directions:

Place ground chicken,egg,1/2 cup Parmesan,bread crumbs, garlic,oregano and 1/2 tsp salt in a medium bowl. Knead mixture together with hand till evenly combined. Form mixture into 1-inch balls. In large non-stick skillet,warm olive oil over high heat. Place meatballs in pan and cook until all sides are browned, approximately 8 minutes for each meatball. Remove with slotted spoon,and add to your favorite spaghetti sauce.

2 lbs. ground turkey
1-1/2 cups fresh whole wheat bread crumbs
2 eggs
2/3 cup RaguŽ Old World StyleŽ Pasta Sauce
8 ounces part-skim mozzarella cheese, cut into 12 cubes
1/2 tsp. salt

I halved the recipe and only used 1.3lbs turkey, 3/4 cup bread crumbs, 1 egg, and 1/3 three cheese sauce. It filled up all 12 muffin tins. The cheese did ooze out of most of the meatballs!

Preheat oven 350°. Spray 12-cup muffin pan with nonstick cooking spray; set aside. Combine turkey, bread crumbs, Pasta Sauce, eggs and salt in large bowl; shape into 12 balls. Into each ball, press in cheese cube, sealing meat around cube. Arrange in prepared pan. Arrange muffin pan on jelly roll pan. Bake 30 minutes or until done. Let stand 5 minutes before serving. Top, if desired, with additional Sauce, heated.

***Mushroom Tomato Sauce***
8oz sliced mushrooms
2 tbsp olive oil
20oz diced tomatoes, no salt added
1 clove garlic, minced
fresh basil or dried
oregano
S&P
(optional: jar of sauce)

I heated up the oil and put in all the mushrooms. Once they got mostly soft, I added the garlic and stirred for two minutes. Then I added the tomatoes and juice to the mushrooms. I added some basil and oregano and let it simmer for 30 minutes. You could use the sauce like this & add it directly to the pasta. I added mine to a jar of Healthy-ish Tomato-Basil tomato sauce and some pepper. You could add some salt to taste if you prefer it. The sauce was a little bland Apparently the sauce was REALLY GOOD. I don't like mushrooms, so I didn't try any.

For dessert, I had some sliced apples and bought some low-fat caramel dip. I also made corn muffins, bought apple butter, and bought some apple-cider donuts. I only had some apples. I wanted it to be Fall-ish!
