Eat To Live - Week 3

Half way through the 6 week program!! Yay! I am down 2 lbs this week, giving me a total weight loss of 12 lbs. I'm a little disappointed, but not discouraged.

So far I have really enjoyed eating this way. The preparation of the can be a bit daunting...all chopping and the mess. I feel like I empty the entire contents of my fridge every time I make a meal! I am constantly cleaning the kitchen. But, playing with my food has taken on a different meaning and I like getting to know all these different fruits and vegetables.

I made a black bean soup over the weekend. I didn't soak the beans so it took almost 2 full days to cook and the beans to soften. But, it is delicious and I am having family over for dinner tonight so they can participate in "Meatless Monday" LOL! It's a good way to show them that I am eating delicious, healthy foods.

I also found a Groupon for a vegan cooking class, so hopefully that will broaden my meal ideas. The class is on Oct 24th. I'll be sure to let you guys know how it goes.

I did yoga 5x during the week and that was a good thing. I'm getting a little stronger, but yoga is still difficult for me. I bought another Groupon for a month of yoga classes and I'll start going when I'm out of the 140's or when I can do triangle pose! emoticon

My energy is incredible. I feel very good throughout the day and my skin has gone through a major transformation. I'm shocked to see such benefits in a short period of time.

I've had some moments when I want to have something other than what I'm making, but my cravings for fatty foods are really vanishing. My saving grace this week is an food find from Trader Joe's...eggplant hummus and some homemade chips from whole wheat pitas have been a real delicious "treat" for me. I also found a naturally decaf chocolate chai tea that really satisfies me when I am craving a glass of wine in the evening.

I'm still salting. I have a few different types of salt-free seasonings, but I still need a little of the real thing. I also bought a raspberry balsamic and I cooked it down to a syrup like consistency and had it on a spinach salad that was delicious!

    Sounds like you're doing great! I think I only lost 12 pounds total on the 6-week challenge. Soups have been my savior--I like lowfatveganchef's "comfort soup" cookbook and use it all the time! The soups are so filling, I eat half what I used to and get full. And then just cook up some greens and that's it...so, you CAN be lazy and do ETL! emoticon But sounds like you're having fun experimenting! I hope the cooking class goes well.
