Pumpkin chia pudding

This afternoon I made a pumpkin chia pudding to celebrate the season :) I love everything pumpkin and this breakfast has become one of my favorites as anything with wheat (muffins!) are out at this time.



Pumpkin chia pudding 2-3 servings
3/4 cup coconut milk
1 cup canned pumpkin (chilled)
4Tbsp chia seeds
1/2 tsp cinnamon (I used a lot more as I like cinnamon)
1/4 tsp ginger
pinch nutmeg
1-2 Tbsp
agave nectar

Whisk together till smooth, refrigerate for 2 hours or overnight to thicken.
I like cinnamon and ginger, so I added a bit more than the recipe calls for, pretty much double I guess.

    I'm not crazy about pumpkin, but I bet this would be delicious made with baked sweet potatoes!! Thanks for the recipe!!!

    This is a delicious recipe - and you can do so much with chia seeds - who knew? I've made this pumpkin pudding thanks to Lis193 who has posted this before. If you want something that tastes like tapioca, leave out the pumpkin, use honey instead of agave and add some vanilla. I've even made lemon pudding with lemon crystals.
