But hey, at least I have dinner going. I've got some vegan chili in the crock pot for supper tonight, and for leftovers for the week. It's got soy chorizo, two cans of canellini beans, diced canned tomatoes, two colors of hominy, two chopped onions, chili powder and cumin. I used the broth from the beans and hominy for both flavor and thickening (I probably won't need the cornmeal slurry this time). It tasted good at the start, so I'm looking forward to how it tastes when it's finished (and tomorrow night after the flavors mingle). I'm going to make a batch of corn muffins to go with it (chili absolutely cries for some kind of hot bread or biscuits). I'm so happy that it's got the gorgeous brick red color I love in Mexican and Southwestern food, probably a mix of the chorizo and chili powder. Guilty confession: next time I probably won't use soy chorizo. I'll probably use beef or pork. And I'm guessing it won't stay vegan tonight, because knowing me, I'll probably put some shredded cheese on top of it.
I'm also planning to boil some eggs for sandwich spread and some tuna salad for sandwiches. But if I don't get them done tonight I'm not going to beat myself up because I do have PB&J in the pantry.
I have so no energy right now. Probably backwash from the difficult week I had. I'm really tired.
