It's been a while since I did a full-on food prep. I'm still cooking sporadically, but I have been eating out a bit too much these past 2 weeks, so I'm re-focusing by cooking up a storm today. Lots of veggies, lots of flavor, lots of options, no excuses.

(I didn't bother making meatballs and just browned the chorizo with onions and mushrooms. Then I deglazed the pan with pinot grigio, added the kale, and subbed coconut milk for the cream. Also added some turmeric, cumin, red pepper flakes, garlic, and oregano. Yum!).

Whew! It took a while, but it was so worth it. The Chicken, Bolognese sauce, and Chorizo/Kale/Mushroom meals all made so much that I was able to freeze half and save it for a lazy week sometime in the future :)
