I did not have any regular flour to make pumpkin mini donuts and looked in my cupboard and found an angel food cake mix, added spices (cinnamon, allspice, ginger & cloves), quite a few packages of stevia and 2 tbs molasses and 1/2 can of pumpkin. I tasted before adding the stevia and thought it seemed awfully tart. Finally after baking in my new mini donut baker (Babycakes Donut Maker) they turned out nice and fluffy. I dipped some in a glaze made of coconut oil, stevia and vanilla. The rest I will serve plain without the glaze.
Amazingly they turned out pretty well and DH likes them.
