Pear, pancetta, ricotta salata salad

Wanna keep a good habit going. Still posting veggie based meals here. It's nice to see a log of some of the diet changes I've made :)

Fall inspired salads and soups, yay. Pears are a fall favorite. This is a new one I'm eager to try.

Pear, pancetta, ricotta salata salad
Pear, half firm ripe, sliced and doused with some lemon to keep
Pancetta, pieces browned in a skillet, one serving
Ricotta salatta cheese, one serving, thin shaves
Lemon, wedge for juicing the salad
Red cabbage, thin strips, about a 1/2 c. (optional, I add for extra color and fiber)
Arugula, 1-2 cups

Eat with honey lemon vinaigrette.
