Still not tracking. I think about it and then groan. I've been trying to eat more of a grain/gluten free way for breakfast and lunch instead. Then, I just go ahead and eat supper normally. I do intend to at least cut down on that soon. Last night I really wanted to get up in the middle of the night and have a snack, but I forced myself to stay away from the kitchen.
The other day I was purusing one of my favorite websites, www.mygutsy.com
and I stumbled upoon a recipe to make my own soaked brown rice flour. I tried this and had wonderful results. There were two options to soak it- raw milk or apple cider vinegar. I decided to try the apple cider vinegar. Apparently I was just supposed to soak it overnight, but things were going on and it just wasn't convenient to make it then ( Wed). So, on Thursday I rinsed off the rice and then put it in the oven on warm for a few hours until it was dry. I then put it a little bit at a time in my coffee grinder to process it into flour. It was fairly easy although the dust from the flour flew in the air even though the lid was attached securely to the grinder.
On Tuesday morning I tried a recipe that I found online on a different GAPS site (I'm not fully adhering to the diet but I like trying some of the recipes). The recipe was for banana pancakes. I mashed up one banana and mixed in one egg. Then I fried the whole thing in olive oil. It was pretty tasty, but was falling apart. I figured that once I got my flour made I'd try that with it to thicken it up. I did that this morning. It was pretty good. The flour was a bit crunchy still though, maybe I didn't grind it long enough. Also I didn't taste the banana as much. Will have to experiment...
I'm also working on coconut flour. Processed the coconut yesterday and will make the coconut milk and flour probably on Monday.
