It couldn't ahve been a better time for my a SparkTeam I am a part of to have an October Recipes Challenge. ABout 10 days ago I had found my energy levels down, my appetite increased, a large lack of sleep and water intake, time crunch, etc. During my search I found a YouTube Channel leansecrets that I fell in love with. This led me to her FB page, Instagram and Blog site. I have already learned a ton and it led me to another YouTube Channel FullyRawKristina and her FB page.
I have since bought multiple clean ingredients and began using spices and such I'd never tried before but have had for years. The other day I tried my first full clean recipe from leansecrets. Here is the link
It was amazing. I did use a Trader Joe's whole wheat tortilla because it is what I had on hand and my marinara wasn't organic but it was still deicious and a much better alternative to ordering out or granning something from a grocery store AND cheaper. INgredients I used were :Whole wheat tortilla, marinara, now sodium diced tomatoes, green pepers, jalapenos, red and yellow sweet mini peppers, onions , feta cheese and basil, parsley and oregeno (three spices I had never opened before) I've made it twice now. My boyfriend even liked it which I was surprised considering I'd used spinach and feta cheese.
I used mushrooms, little sweet peppers, onion and spinach. Then used one full egg and the egg whites of three eggs. As the veggies cooked I mixed half an avocado with a few tbsp. of Greek yogurt (this is how I make guacamole). When the veggies were almost ready I put the eggs in. Once that was done I put it on top of the guacamole and then sprinkled with feta cheese. It was good. Didn't necessarily need the guac but it was still good.
This is the second recipe in on this YouTube video. I used half a head of cauliflower because it was just me. I used way too much rosemary and added greek yogurt to give it a sour cream flavor after I'd mixed it. It was really good minus the overpowering taste of rosemary. I will definitely be making this again and again and if one day my little one decides she likes mashed potatoes I'll be making this for her:)
I have made this recipe about 5 times now and have dropped the lemon from it and added parsley. When it's blended I put greek yogurt on top to taste like sour cream.
Soul Shine Juice "Green Juice"
This is one of the channels I follow on YouTube. I'm not as extreme as Kristina but I am finding I like her recipes and she is full of knowledge. I thought this juice was great but when I had my boyfriend, daughter and one of my daughters friends try it they did not like it. Acquired taste maybe?! The first night I drank it within 20 minutes or so my mood skyrocketed and my motivation floored and I decided to clean my whole closet, pack away my summer clothes and donate clothes that were too big to goodwill. I had been needing to do this for over a month. It might have nothing to do with the juice but it may have:)
I did shorten the recipe. I can only drink about a glass at a time rather than a whole jar. I used one apple, one lemon, two celery stalks, half a cucumber, kale, and I did not have romaine lettuce so I didn't use anything.
Watermelon Juice Secret
I got this from FullyRaw Kristina on Youtube, same one as the green soul juice. I shortened this recipe as well to make one glass rather than a jar. It is really good with no need to add anything extra other than the watermelon and mint. The other nice thing about it was it was really fast, I didn't have to get the seeds out. It makes you realize how hydrating watermelon is because I didn't have to use a lot to get a full glass worth.
