Eat To Live - Week Two

ok...not as big of a loss as last week, but in 2 weeks I am down 10 lbs, so that's pretty extraordinary. Woo hoo!! And the good news is that it gets easier every day.
No cheats besides some oil and salt again this week. I know the salt is terrible, but I am having a really hard time eating veggies without a lil sprinkle.
I tried a couple recipes from Dr. Fuhrmans book for the salad dressings, the tofu ranch and the Thousand Island. Neither one took the place of the real thing and they really didn't taste that great. I'm going to pick up some flavored balsamic today and see if I can jazz up my salad a bit.
I also made the Eat Your Greens smoothie and that was good. This week I had smoothies pretty regular for breakfast and I also had one out. I asked they make it with water in place of apple juice and it was delicious! I've been having kale, spinach and watercress in my smoothies. Another trick I learned for kale is kale chips! They were crispy and delicious.
And I had a fantastic meal out at Soup Plantation. They have an amazing salad bar and I really went to town. It was fun to eat out and still be in control of what I ate.
I did experience some headaches early in the week, but that has since subsided. My energy levels have been outstanding and I walked about 6 miles last week and I attempted to do yoga! My cable network has some on demand exercise choices and I did Strength, Relaxation, Abs and Vinyasa twice! Of course I had a hard time and I couldn't do all the poses or hold them...but I did yoga 5x last week!!!
I had taken a walk on the beach on Friday and hung out after and even went for a swim. I got a little fried. So, I think the sunburn dehydrated me a bit. Plus the Santa Ana winds this weekend really stirred up a lot of dust and it was hot hot hot. I could not quench my thirst at all. But, I'm hoping that the reasons I already mentioned are to blame because I drank gallons and gallons of water this weekend.
