Healthy muffins with no flour!

3 ripe bananas mashed
3 1/2 cups rolled oatmeal
2 eggs
1 cup vanilla almond milk
1/2 cup crushed walnuts
1/4 cup craisins
1/2 cup mini chocolate chips
1 tsp vanilla extract
1 tbsp cinnamon
1 tbsp baking powder

Preheat oven to 375. Mix together all ingredients in large bowl. Spray muffin tin with non stick spray. Fill muffin cups to top....these muffins don't rise so don't worry about them overflowing. Bake at 375 for 30 minutes.

These can be made ahead and frozen Enjoy!

    LOL. Getting rid of as in giving away or throwing it out. Although I don't like to do the later with food. Oats or no oats, I'm putting any additional concentrated carbs on hold. I'm slowly eating the oats I got in the freezer to get rid of them. So I'm not making any more things with oats. Though, I got some coconut flour and almond flour in the fridge that I can try making something like this later on.

    This is a great base recipe - thanks for posting it!

I love that muffins are so adaptable: you can make tons of mods to the base recipe and have them still turn out great. I've swapped the banana out for pumpkin; have used all sorts of ratios of rolled oats / oat bran / steel-cut oats; used either protein powder or skim milk powder and water instead of the almond milk; used different nuts / seeds / dried fruits; played with the spices; and often add 1/4c of blackstrap molasses to increase the iron. Even with all of the variations, I've never had a bad batch.
