I'm finally able to work out every day again. It's mostly water walking, but at least I'm able to drive harder now. I can also use the stationary bike and the treadmill (ick). I've been lazy the last few weeks and haven't done as much as I should have. On top of that, I've been eating junk food and sweets way too much. So, today is day 1 again.
I've planned out my menu, starting with cleaning my kitchen completely. I washed the dishes last night and will go to the grocery store on my home today. So here's the plan.
Monday: I'm cooking for my Bible study group tonight, so it's a big dish. I'm making Campbell's Homestyle beef stew, which I already entered into SparkRecipes to track. That and a salad will make a nice dinner that's easy to cook, healthy, and easy to transport.
Tuesday: Easy Lime Grilled Chicken with oven-roasted cabbage. I'm hoping the hubby will try this without looking too closely. Hey, it has bacon! Making a double-batch of the chicken for Wednesday.
Wednesday: Chicken satay using Nicole's peanut sauce, only with almond butter instead or cashew butter. Just depends. Serve this over dreamfield's high fiber noodles for the dudes. Serve with steamed green beans and any leftover salad we have.
Thursday: My fav London-broil style flank steak, mashed potatoes for the guys, and steamed broccoli.
Friday: Leftovers! My fav meal.
Saturday: We're having a group over again, so Asian pork chops for a crowd. Serve with rice for the others and greens beans with fennel and lime.
I need to come up with a plan for Sunday, too, since that tends to be a throw-away day for me plan-wise. Maybe a tomato soup with a grilled chicken salad. Or hot dogs and homemade baked beans. Something like that.
Just having a plan is half the battle for me. Following through is step 2. Cleaning is step 1.5 and step 3, if you know what I mean. Finding the time to clean the kitchen is going to be essential. That and icing the knee, I think.
