Fresh produce rock!

My first week of challenging myself to add fresh fruits and vegetables to every meal and snack is over. How did I do? As predicted mornings and lunch at the lab proved to be more difficult than the meals I normally eat in a relaxed setting at home. Despite not fully reaching my goal of eating fruits or vegetables with EVERY little meal/snack, I did end up eating more freggies than before.

My mission this week is the same, I plan to gradually weed out the highly processed foods from my diet and bring in more fresh produce. I hope you will wish me luck, cheer me on, or even better; join in!

This week, starting today and ending Sunday, I plan to do more of the same. I'll still aim for eating fruits and/or vegetables at every meal/snack. AND I'll also aim to prepare only fresh cuts of meats and fish for my dinners. And as for my meatless dinners, I'll go with whole legumes and eggs for my protein and steer clear of the highly processed meat-substitutes. Yes, I am stepping this up! (Eek, this will mean NO bacon!)

    Bacon is baddd, and sausages, and all that jazz. My lunch is just chopped up raw veg and salad, sometimes with cottage cheese or tuna, pilchards, salmon, etc, plus about 5 pieces of fruit. That's just for lunch!

    No Bacon! That is a hard one . I was vegetarian for 5 years and never really got over missing bacon. Good luck this week and great job on tracking last week!
