one more veggie recipe

Just one more veggie recipe....this was really very good....I left out the salt, the cheese has enough for my taste....this was very good and I'll be making it again....with a little lean protein it was a meal for me...

this came from MrFood test kitchen in the diabetic recipes....there a lot of low cal healthy recipes there...

Cooking Time: 40 min...
What You'll Need:
2 pounds yellow summer squash, thinly sliced on a diagonal..
3/4 cup shredded reduced-fat sharp cheddar cheese, divided
1/4 cup reduced-fat mayonnaise
1/4 cup liquid egg substitute
1/4 teaspoon salt
1/4 teaspoon black pepper
What To Do:
Preheat oven to 350 degrees F. Coat a 2-quart baking dish with cooking spray.

In a large saucepan, add squash with enough water to cover; bring to a boil. Reduce heat to medium and cook 8 to 10 minutes, or just until squash is tender. Drain well in strainer and gently press out liquid with fingers.

In a large bowl, combine squash, 1/2 cup cheese, mayonnaise, and egg substitute. Spoon into prepared baking dish. Sprinkle with remaining cheese.

Bake 30 minutes, or until golden and heated through.

    I love summer squash, that sounds good!

I remember when one of our local news stations had Mr. Food segments during the noon news during the week, that was years ago.
