This morning, I went out first thing to harvest our overloaded pepper plants before the cold front moves in tonight. Now I have bushels of peppers (sweet and hot) that will need to be processed in some way or another over the next couple of days. Every year I tell my husband in the spring, "Let's keep the garden small this year. Remember that it is just the two of us most of the time now." And every year, he is like a kid in a candy shop when it comes to planting. We always end up with too much even when we try to give it away. I guess it is the old farmer in him....dream big! Anyway, it's not the first time that I find myself buried in produce, searching the web for new and interesting recipes, pulling out the canning jars and freezer boxes and rolling up my sleeves to spend a few hours in the kitchen with a knife in my hand.....and I don't guess that it will be the last!
I'm thankful that I live in a time and place where my biggest problem of the day is what to do with all of the food I have. Come to think of it...that is my biggest problem MOST days. It's a problem that much of the world would love to have and I need to remember that and be grateful.
