Golden Anti-inflammatory Soup

Golden Anti-Inflammatory Beet Soup Recipe

Beets are a source of phytonutrients called betalains, which provide antioxidant, anti-inflammatory and detoxification support.

I(not me--Chris emoticon ) then paired the nutrient rich beets with creamy coconut milk, collagen-rich chicken bone broth (or vegetable broth) and anti-inflammatory ginger and turmeric.

Once the beets are cooked and peeled, this recipe takes minutes to assemble and blend. If you use a high-powered blender, you can let the soup heat up right on the blender!

Clean up is quick and easy. Pair with a nice large salad, green tea and you have the ultimate anti-inflammatory meal.


2 cups organic chicken bone broth (or vegetable broth for a vegan version)
3 large organic beets, washed cooked and peeled
1 can coconut milk, from BPA-free cans
2 Tbsp. raw coconut oil (optional)
1 lemon (or lime) peeled
1″ fresh ginger, peeled
1 Tbsp. cumin, ground
1 tsp. turmeric, ground
dash of salt


Combine ingredients and blend.

    Thanks for sharing the recipe. I've never been a fan of beets but thanks to my time here at Spark, have become more willing to try new things.

And if it really does help with inflammation, that's just another reason to give it a go.

    I make a similar soup with squash.... and then add chickpeas and clean out my fridge of other veggies. I really want to try it with beets now! I wonder why the soup is not pink?

    emoticon for sharing! I have a turbo' blender and make great antioxidant drinks etc. daily ................. I love ginger and like turmeric and I know beets are so great for you ................ I just have to get past the strong flavor. Do the spices help round out the flavor? .............. would love to know ................ emoticon
