this is the recipe I talked about yesterday....it was very good ...btw it came from a site called Mr. Food test kitchen....there are a lot of very easy recipes...most seem to be healthy....
what you need:
1 head of cauliflower, cut into florets....(I chopped my so it would cook faster)
1/4 cup chopped onion
1/2 cup low fat cheddar cheese, shredded
1/2 cup panko bread crumbs, (I found whole wheat ones )
2 large eggs lightly beaten( I think 1 would be enough)
1/2 tsp. salt..( I left this out)
1/4 tsp. cayenne pepper
1 TSPB. olive oil...divided
what to do: in a large pot of boiling water cook cauliflower and onions about 10-15 minutes, or until fork tender, drain....
then mash until smooth, I used my mixer...
then stir in shredded cheese, panko crumbs,eggs, salt, and cayenne pepper.. form in to cakes or patties...about 3 inches around
In a large skillet heat olive oil over medium heat, cook patties 4-5 minutes on each side. serve hot....
this makes 6... 3 inch patties, I made 4 larger ones....

I think 2 eggs was too much as the mixture was rather wet.....I also think that the onion might had added some moisture....they did taste good, might needed a bit more spice for me...DH thought there were potatoes cakes ....
use a non stick skillet cause they could stick very easy..
