Another day comes around and I'm feeling really good about progress so far, particularly my increased knowledge.

I am now mostly within range on my recommended quotas - protein was the most difficult to manage as I was always under but now I've started to include in my daily diet things like tahini spread, feta cheese and olives as well as continuing with cottage cheese, fish (tinned salmon, tuna, mackeral and sardines), eggs and nuts/seeds. I would much prefer fresh salmon fish, but it is expensive so I'm only having that for a treat every now and then.

What has been instrumental in managing the fatigue and blood sugar fluctuations is eating regularly throughout the day and starting with a hearty breakfast- I usually have been 200-300 calories in my 3 main meals and the rest is snacking in between. I can eat up to 1550 calories per day and usually work close to that figure (it was much better when I could exercise and then eat more!). LOL

Here is this mornings hearty breakfast - mushroom and tomato omlette. 2 eggs, 6 cherry tomatoes and 5 medium mushrooms! YUM

I have this with copious amounts of green tea which also helps with my daily water quota.

My current challenge of no coffee, no alcohol and the introduction of 2 green smoothies a day is going great! I miss the coffee but I am having roasted dandelion herbal tea as a substitute which comes in a can and is gradules just like coffee - it is also nice and thick like coffee. Yesterday all I wanted to do all day was sleep because I had no stimulants in my system but that is understandable - today I am feeling quite a bit more 'naturally' awake.

I'm really already looking forward to coming up with ideas for ingredients for today's smoothies - yesterday's smoothies were delicious - they contained spinach, banana, garlic, grapes, cucumber and spirulina. YUM! I could feel the spirulina working afterwards in my body that's for sure.

Yesterday I joined the "Stressbusters Challenge" and looking forward to getting into that starting today - it goes for 4 weeks. It is time for me to learn ways to manage stress in my life and not let it build up until it burns me out.

I'm dedicating this time of my life as an absolute time of discovery about myself and I'm both surprised and excited about what I am finding out - it's been an awful long time since I did nothing else but focus on myself - a lifetime in fact. So it's all about me at the moment and I give myself permission to protect this time of self discovery at all costs. I am transforming before my very eyes!!

    That looks good. One of my favourites too. When I don't have mushrooms, I used tomatoes and feta. Also very good.
