I tend to take photos of the meals I prepare... I'm a professional photographer and foodie!

This is one of my favorites.. a chocolate cake with frosting.... healthy style!

I stopped buying the premade cake mixes (not hating on them though!) and make my own.

There are a multitude of healthy recipes online and when you do it yourself its so much better. Some egg whites, coconut flour, stevia and good quality cocoa powder. I basically go by 1 cup egg whites and one cup flour adding a tad of water until it has the consistency of what you are used to from those boxed mixes. You can go nuts and try all kinds of flavorings with natural extracts.. almond mini cakes, lemon... use a butter flavored spray and make mini cakes.

The frosting CAN be cream cheese and maybe a little stevia (natural sweetener) or organic raw honey... you can even use extracts. I prefer greek plain yogurt with a little sweetness and stick it in the fridge while you put together your minis and place in a 375 degree oven for 30-45 minutes. depends on pan you use.. just keep an eye on them.

I look online for healthy versions of recipes and meals. I would also recommend healthy cookbooks... go to a bookstore and just spend time flipping through the pages... its fun to arm yourself with meal ideas you know you can enjoy!

And tweak the recipes as you see fit. I do this to get the nutritional numbers I want. If it calls for one too many ingredients I omit one or two without taking away from the recipe.

    Hi KOFFEENUT, and THANKS! While I love all kinds of desserts... being obese and needing to lose some serious weight I knew I had to make a lot of my own meals and desserts because store bought foods and meals contains so many unnecessary ingredients... like way too much sugar and sodium. Yes, you'll have to toy around with the recipe as texture is a little different at times.. but overall very close to what you are use to. Applesauce in cakes are GREAT!

    Your pictures are KILLER - I'm totally salivating right now! Thanks for sharing the guidelines on healthy cakes. I've been using box mixes with egg whites and applesauce but have been toying with the idea of branching out...
