Carrot Pulp Soup

Carrot Pulp Soup (When I juiced the carrots I used the pulp to make a soup)


Bunch of carrot pulp soup (it was a lot)

Bunch of green pulp (I used maybe a cup)

1 Cup white beans

1/2 onion and some shallots

1/2 red pepper

3-4 Cups water (you could use carrot juice or veggie broth)

Lots of spices

Put the cut up onions, shallots, and red pepper in the soup pot with a little water and saute.

Then add the carrot pulp and the water and stir, add as much water as you think you need (to make it thick or thin)

Then add the green pulp, beans and spices and stir. Let it cook for around 5 minutes.

I blended the soup with my stick blender until everything is blended.

Then I let it simmer for around 20 minutes.


Note:

I don't measure anything so everything is a guess. And the times are a guess because I didn;t look at the clock.

You can add any veggies and beans that you want or have on hand.

You can add any spices you like. I just take whatever spices I have and put in the soup until it taste good.
