I'm a pound and a half down this week. I'm not thrilled about it especially when I know I derailed myself over the weekend but I can't worry about what did or did not happen yesterday. I need to focus on what is happening now.
Lunchtime today I will head to the produce stand and pick up my stuff for the week. I have a chiro appointment after work but after that I'll head to the meat market and pick up my proteins and to the grocery store for my greek yogurt, frozen yogurt and dried beans. Just because I didn't get to my slow cooker plans this weekend doesn't mean I can't do it during the week.
Lunch will be a salad with tuna and dinner tonight will have to be out since I'll be out running errands etc and I have to pick someone up at the airport at 9:30 so I think I'll do Crazy Bowls. I like their superbowls and the small one with quinoa is very filling. There are approximately 12 g of fiber in one cup of quinoa! The small white meat chicken with veggies, quinoa and teriyaki sauce has 426 calories, 16 G fat, 148 G carbs, 44 G of fiber, 42 G of protein and only 137 mg of sodium! The quinoa by itself is 7 oz and it is 246 calories and 14 G of fat. The brown rice has just as many calories and only 1 G of fat but it also only has 1 G of fiber so it's really a benefit to get the quinoa and I love the texture and flavor.
