I'm on track with my New Year's resolution. There's 93 days left until New Years and I plan to be healthier by then. This past week has been easy in terms of a healthy diet. I've cooked all my own meals and there's so many healthy foods available in the early fall. I enjoyed apples, sweet potatoes, squash and tomatoes grown locally and purchased at our Farmer's market along with yummy pears, carrots and spinach from the grocery store. I had planned to eat fish twice during the week but only had it once. I want to improve on that as I feel its a very healthy choice for me.
A new recipe this week was vegetarian but high in protein: Spicy Lentils (curry) with a poached egg on top. Delicious! I want to eat more meatless meals but need to be careful about carbs. I'll look for at least one more meatless recipe with the right nutrient profile and try it out this week.
