This week I found out how passionate some people get when you express
a difference of opinion. ...I even got hate mail.
{...I love the Spark mail feature....BLOCK USER...}

OH YEAH...AND I ALSO GOT CALLED 'LITTLE OLD LADY'

I'm into bean stews again...and a love of black beans.
I make a black bean stew ...TO DIE FOR.
And it becomes my all purpose 'sauce' ...
you could put it on cardboard and it would taste amazing
{..hmmmm...that gives me an idea...I'll try some over tofu...}

here's my recipe
My black bean stew
1 cup water
1 Tbsp olive oil
1 onion diced
3 carrots diced
3 celery stalks diced
1 bell pepper diced (oops forgot to add this before)
½ tsp garlic powder
½ tsp chili powder
½ tsp cumin
½ tsp turmeric
3 bay leaves
2 cans low sodium fat free chicken broth
1 cup dry black beans
1/2 cup dry kidney beans
1 cup crushed tomatoes
Even better with a few skinless chicken thighs
(I use 4 occasionally…with the bone then I debone afterwards)

If possible soak clean and soak beans in a quart of cold water for 8 hrs.
there is also a quick soak method...boil water, take off heat, add beans cover 30 min
(don't use the water from the soak)

Take big pot…add water and oil, onions, sautee over medium heat until translucent.
Add veggies and seasonings, and crushed tomatoes…stir.
Add drained/rinsed beans and the chicken broth
(you may want to add another cup of water)
(if adding chicken thighs...add them here)
Let cook , covered over medium low heat for 2 hours. Stir every 30 minutes
