Hey there Spark People!
As I continue my Paleo challenge, my current focus is to fit more veggies and less fruit in my daily diet. To that end, I think I did a really good job of it yesterday! Breakfast was eggs with avocado, salsa, and apple slices. Lunch was a bit of an exploration - I made Spaghetti Squash Marinara, with grilled chicken and vegetable blend. It was so wonderful, I ate it again for lunch today! Dinner was grilled chicken marsala, with a vegetable blend - I work at a gourmet restaurant, and I got to try the dish for free! I also had a 3 ounce pork loin at dinner because the portion of chicken marsala was smaller. I think I found a nice balance between protein and carbs from vegetables. Post workout snack was a homemade Paleo muffin, grapes, and a tablespoon of sunflower butter. I know grapes are high in sugar - I'm a work in progress!
I also had another great run yesterday! I ran four miles in 37 minutes - probably the fastest average I've been able to achieve yet! I was so happy when I pulled out my tracker and saw that my average time per mile was 9:36. I really think its the diet that's helping me perform better, which is great! I'm trying to get my time down so that, when my husband gets out of boot camp, I can jog with him and have a prayer of keeping up, lol!
Today's workout was pretty great, too. I did a Spin routine for an hour, and then I did a squat circuit, finishing off with a few exercises for my back. I feel pretty good about it so far.
Also, I'm excited because today I am picking up specialized inserts for my shoes. I have had foot problems in the past, so I am hoping these will help ease those problems. I will let you know how they work!
