Hey there Spark People!

I am getting ready to start another day of my Paleo challenge. As previously mentioned, I am going to devote more energy into my challenge this week towards eating more filling lunch time meals. To that end, I was successful in doing this yesterday, with the result that I wasn't nearly so hungry throughout work, and I was able to eat a nicely sized (slightly small) dinner. I would rather start eating smaller dinners, since I eat them so late and I don't want to be so full when I'm going to sleep. I have noticed that I sleep worse when I have eaten more before bed.

But I think yesterday I really did the trick! For breakfast, I had homemade apple cinnamon Paleo mini-muffins with breakfast sausage and black coffee. I snacked on a banana mid-morning. I had sauteed kale with tuna and avocado for lunch. I snacked on a Larabar with an iced Americano (my Starbucks Paleo fave) before work. And after work, I had three ounces of sauteed chicken with mixed vegetables, and a glass of chardonnay. Since I haven't had chocolate in a week, which is a loooong time for me, I also had a few dark chocolate covered almonds.

With that day's worth of food, I slept like a baby! I got a full nine hours last night uninterrupted (except for when my cat woke me up by pawing my face, but that's a different story!)

Looking back on what I ate, I think that what I realized is that I ate more vegetables than fruit. While this is an obvious change that I need to make - its something that I have known for some time - I think I just proved it to myself yesterday. So also this week, I am going to focus on eating more vegetables and protein and less fruit. I'm betting it will help my sleep cycle!
