Day eight - Started out good

Monday, September 23, 2013

First week was up and down but I managed to drop some pounds so that's empowering. Breakfast this morning was fast food. I was late for work because of a family crisis that had me up very late last night and very early this morning. I'll finish the day strong.

I power walked today as long as my back would allow which wasn't for long but I hope if I can do that numerous times throughout the day then I can get in some good cardio and get my heart rate up.

I'll go make my lunch now. Tuna sandwich with bell peppers and cucumbers on the side and a sliced apple with cinnamon. I have to get to the produce market and the meat market tonight for my fruits, veggies and proteins for the week.

    Becca have you ever tried using plain Greek yogurt in place of the mayo? It's actually really good. I've also mixed some ripe avocado and a squeeze of lemon juice in with it and it adds a great layer of flavor and creaminess.

    My tuna salad yesterday was just tuna, chopped carrots, chopped celery, a little white pepper and a pinch of garlic mixed with about a 1/2 tbsp of low fat Ranch dressing because I haven't gotten any yogurt from the grocery store yet. It was quite good on wheat toast lined with spinach leaves. I have never added hard boiled eggs to my tuna but that would be a good protein boost.

    Now, I want some tuna! :) I understand having your back hold you back from being able to do what you want. If it helps, I am able to go longer than I could at the beginning. I have degenerative disk and I have found that I am doing better the more I do, as long as I don't push it. Great job doing what you can!!

    Your lunch sounds so yummy and healthy! Bet it was satisfying. I love tuna. Maybe I will make some tuna salad with hard boiled eggs, sweet pickles, dill weed, celery and a little mayo. Have a great week and here is hoping for no more family crisis this week.
