First use of big meat re-use

Well we finally got around to roasting that big old pork roast today. Pork tacos! All I can say is wow, they were really delicious. I loaded them up with mostly vegetables, but the meat was out of this world. I had the hubby roast it in the oven on a rack to let the fat drip off. So it was mostly lean, but a 10+ pound roast only yielded like 6 pounds of useful meat. It was still less than $2/lb. My friend Vanessa has said she never pays more that $2/lb. for meat, so she would be proud. LOL
Tomorrow is weigh in day. I had the hubbs hide the scale, but my son found it earlier this week and told where it was. So needless to say, I cheated today and weighed anyways. After the week I've had, I was amazed to see a 3.4 lb. loss. We'll see what the "official" weight is in the morning!
