This past Sunday I decided to devote a couple hours to food prep and cooking for the week. I roughly planned out some meals, so I chopped some veggies, soaked some beans, and made some no-bake protein bars. I have to say, it's made my life a lot easier! My meals have been varied but tasty, and it's been so nice to not scramble to throw together a lunch in the morning. I can just pack up some leftovers from the night before.
Cooking has also become somewhat relaxing! One thing I've struggled with is making cooking/baking a fun process, instead of an arduous one. I seem to be turning a corner this week and I think the food prep helped.
