I have been looking forward to having some of the Pumpkin Spice waffles that Molly bought for me a few weeks ago, so decided that tomorrow would be the day! I looked at my sugar-free syrup, though, and just didn't feel like the syrup would be delicious on the waffles. Hmmmm...what to do? I know! Off to recipes.com I go.
I can't quite go with 1-1/2c granulated sugar, so I subbed a scant 1-1/3c brown sugar instead, added a little more cinnamon and came up with this:
Pumpkin butter! I didn't want a waffle tonight, so I cut a slice of Angel Food cake loaf and spread a tablespoon on that. Then, I tried 1/4 of it and gave the rest to Richard. It passed the test!
The best part after taste? Only 22 calories/tablespoon! Go ahead, you know you want some!
