I'm not including the recipe here, but here's the link of the one I'll modify:
Sweet potatoes, chickpeas, tofu, kale, carrots, lentils, apricots, almonds, tomato-brothy goodness, yum yum.
I'm going to replace the white potatoes with tofu. This type of stew is one of my fall favorites, it's a little early in the year for it, but whatever.
Last week didn't go so well. I ended up eating leftovers of dinner, interesting salmon salad....and eating out, about half and half. I could see myself slipping into some bad habits, and reduced my veggie intake a bit.
For next week, five salmon salads are sitting in the tupperware in the fridge, ready to go. I think they'll keep well as the fridge is set on a lower temp.
I'm browsing spark for more fall themed salads because they are easy to batch prep for weekly lunches.
