Gluten-free winter squash pizza crust

Friday, September 13, 2013

Experimented with a gluten-free pizza crust tonight. I based it off a sweet potato crust recipe and a cauliflower crust recipe. I used about 1.5 cups of winter squash, 3/4 cup rice flour, 1 egg, seasonings (thyme, oregano, rosemary, onion powder, garlic powder), a little unsweetened almond milk, 1/2 tsp baking powder. Baked at 350 for 25 min or so. Add desired toppings and bake until done to your liking. I used red onion, spinach, mushroom, sauce, and cheese.

You do need to eat it with a fork, not pick it up, but it was delicious.

You probably can leave the milk and baking powder out. Not sure if my baking powder is gluten-free but only eating mostly gluten-free, not 100%, so I'm not worried about that small of an amount.

It sounds really healthy. It's too bad you have to eat it with a fork, but if it meets your dietary needs, so be it.

I've done the low gluten as well, not totally free. I don't have any intolerance to it but it does help you eat more fresh foods and stay away from the more processed junk. I use a lot of recipes w/ almond flour..Hubby is allergic to coconut so we have to stay clear of all things related. It helps to stay lower on the bad carbs too.
I have a yummy recipe using only 1 c. almond flour,1 c. Parmesan cheese, oregano, basil and a few tablespoons of water. mix together, make a crust in processor spread on pizza sheet cook @ 350 until brown....add tomato sauce and toppings...YUMMY!
