The last 2 days!! Progress!! I am going to try yet AGAIN to get my quarterly reimbursement!! I need to go 14 more times by the end of the month! It's possible, definitely. If I keep it light, I can double up, or I can go after I do something outside and go stretch and use the whirlpool.
Food has been good, I have gone over calories a bit, but not bad, just by some Sunbutter! I have been following my menu very well, which is an accomplishment! I have been very bored with the things I usually make so I have been combing Pinterest for ideas. I have a few that were good, and some not so much. This week's successes were Balsamic Glazed Steak Rolls, and Chicken thighs with hot mustard and onions wrapped in collard greens in the crockpot. I couldn't find hot Chinese mustard so I got hot horseradish mustard instead. I would next time add seasonings to the chicken (garlic, chicken seasoning), but overall I liked it!
I didn't like the crockpot lemon chicken recipe I tried...It was bitter wherever the lemon peel touched the chicken and the juice was bitter.
