Final week...

This is our last week in Colorado before we head south of the border again with a possible few days of camping in southern AZ..
I am slowly emptying the fridge, freezer and pantry - using up what we have rather than buying ingredients and that made for some interesting meals, especially considering that DD should go easy on the nightshade veggies (tomatoes, white potatoes, eggplant)
I made a batch of chili using 1 fresh tomato only (not the usual can of stewed tomatoes) and lots of veggies, even yellow squash :)

Makings of "Clean the fridge chili":

DH likes his chili with rice but DD and I had it with quinoa which was absolutely delicious!

This being our last week here there is also the job of getting the office packed up but still being operational till the last day, not a big deal for me as I have a portable file carrier but more complicated for DH - computers etc.

It is great to have DD staying with us but a bit of an adjustment as well - the regular routine doesn't always flow as usual... and everyone who knows me knows that I love my routines :)
Tomorrow night she has a gig in Durango (Durango Coffee Company 6-9) playing her favorite music and hopefully selling some of her new CD's. It will be fun to watch her perform again.

In the mean time I am trying not to freak out about the 3 pounds that have crept up since we got here and seem to have lodged themselves around my midsection and won't budge! Agghhhh... eating on plan isn't doing the trick right now. I am hoping that getting back down south will get me on the right track again.

    Don't fret, you will get back to damage control once you are back in your routine and things settle down. Three pounds is nothing in the big scheme of things.

    So glad that you are enjoying your DD but I know all too well how company, any company can really disrupt ones schedule. I too just love my routines and miss them when I don't or can follow them for one reason or another. I have been off routine times for eating with caring for FIL. He is doing better today and yet the progress is slow. We are encourage him to get up and move and not lay in bed now so much. Hard after lying in bed for 3 weeks.

    Hopefully when you get settled again you can get back to
    your regular routine and everything will work out.
    Don't work to hard trying to prepare for the trip.
