Since my health/diabetes "bible" recommends 3 servings of fruit, and I was almost entirely out of fruit, we headed out to the store to pick some up. I got fresh raspberries, melon, Asian pear, pluot and a peacharine. I also got single serving size cups of frozen blueberries, in case I run out of fruit between store visits.
As I mentioned earlier, dinner turned out fabulously! A friend gave me the recipe for cabbage lasagne. She said she made it and it was amazing, and her sister concurred. I was definitely skeptical, but I figured... welp, if I eat real lasagne, I can have like a 2" square piece... so maybe I should give this whole cabbage-as-noodles thing a whirl. Surprisingly, it was really good. So that was a total success!
I got in 6 servings of veggies and 3 servings of fruit today. And 10 cups of water. So I have met all my goals for the day. I accomplished everything I set out to do, and that's a pretty good feeling!
Tomorrow is going to be less-awesome. I have therapy. In the event someone isn't aware of this yet... I. Hate. Therapy. I go because I have virtually no choice. But I loathe every second of it, and it rains on my whole day. I'll make it as good as possible, though, by making sensible food choices. Must remember -- eating a half ton of food will not make therapy suck any less. It will just make me look even crazier cause I'm eating myself to death.
Now I'm going to lay down and nurse a headache and wait for bedtime.
