Salmon brown rice salad

Salmon fillet - 3-4 oz, chunks
Arugula - 1-2 c.
Cucumber - 1/2 to whole, peeled and sliced
Cherry tomatoes - small handful
Lemon - 1/2, slice into wedges for garnish
Brown rice - 1/2 c. cooked

Add 1 tbsp of lemon vinaigrette or tzatziki sauce and enjoy.

Right now I'm looking for something simple, and I'm really enjoying salmon. This should do the trick. The last week has gone well, despite Labor Day trips and a new schedule mixing things up. September goals are working well so far to keep me on track. Having the Tupperware in the fridge on Sunday nights saves me time and $ over the week. It also makes it nice to peek into the fridge and see all the colorful raw ingredients in there :)

I made the Interesting Salmon Salad for last week and had papaya for the first time. After looking up the fruit's nutritional information, I was shocked that it is not more popular as a specialty "health" food. It is definitely a nutritional powerhouse! I may start looking for cold salad recipes that feature shredded unripe papaya.
